Hanging weight is the weight of the carcass as it goes into the cooler before it has been dry aged. Animals will be 600 to 750 lbs hanging.
A mixed quarter gives you prime cuts from the hind end, and some of those delicious slow cook cuts from the shoulder.

Contains ground beef, a few steaks and a roast or short ribs. 10 – 12 lbs of beef.

Rotational Grazing
We practice rotational grazing by using electric fencing to move our cattle across the pastures.
This maximizes the time between grazing, which means there is better regrowth of the grass, more living roots in the soil, and more resilience in the ecosystem.
Healthier soils mean healthier plants which means healthier animals.
- Animals raised for beef are from our herd of Speckle Park, Simmental-Angus cross cows.
- We strive to raise top quality cattle that are suited to grass finishing and have excellent carcass quality.
- Beef is dry aged and processed at a government inspected facility.
